Onion, Ham & Cheese Chowder by pworiginals

2 med.              potatoes, pared and cubed
1/2 cup         water, boiling
1 cup                onion, chopped
3 Tbsp             butter
3 Tbsp             flour
dash                pepper
3 cups             milk
1-1/2 cups    ham, chopped
1-1/2 cups    sharp cheese, shredded
Cook potatoes until tender (10 min.).  Drain, reserving liquid.  Add enough water to liquid to make 1 cup.  In saucepan, cook onion in butter until tender but not brown.  Blend in flour and pepper.  Add milk and potato water all at once.  Cook and stir until thickened and bubbly.  Add ham and cheese, stir to melt cheese.
Yield - 8 servings (but not in my house!).  This is especially delicious with corn muffins/bread.
